What do you do when you have a long holiday weekend? Go camping in your new camper of course!! I had my youngest for the weekend so planned a camping trip for 4th of July weekend. Decided that Daniel Boone National Forest sounded like a fun time! The plan was to leave Friday after work and come back Monday early afternoon so that Elisa could make it to work. She also had to be back for the parade on Tuesday, so we had 3 days and I was so excited!

FRIDAY

Since I knew that I would be leaving early evening and we had a long drive ahead of us, I asked Kayleigh, my oldest, to bring Elisa to my office. It was a good thing she did because we ended up arriving after dark. The main gate into the campground was closed and we had no idea where our site was located. We got super lucky that a campground host was driving by when we got there and she directed us toward our site.

One of the World’s Seven Natural Wonders Like You’ve Never Experienced It Before

While AC and his son Zeek got the camper set up and stabilized, Elisa and I worked inside getting everything put away and beds made. After everything was done, we went back outside to hang out for a little bit.

Since we arrived so late, we just hung around the camp, while the kids played with sparklers and climbed some trees in the dark. Loki, their beautiful Argentine Dogo, enjoyed just walking, exploring and running around with the kiddos. We didn’t stay out too long and were back in the camper within a couple hours getting ready for bed.

SATURDAY

The next morning, after a quick breakfast, and of course coffee, the kids and I took a little drive over to the beach to explore. There was no one around! We thought that the little general store would be open, but it was completely closed up! We couldn’t figure out why the store wouldn’t be open and the beach was completely empty on a great holiday weekend. So, we walked back down to the beach and Zeek attempted to teach Elisa how to skip rocks. It was so cute, but apparently she inherited my lack of rock skipping skills.

After going back to the campground, we decided to all go for a little hike. There was a small trail off the main campground road, so we checked it out! We knew there was water back there because we’d seen the views while driving, but no matter which way we went, we just couldn’t seem to find the water. Unfortunately, due to some medical issues I’d been having, I was unable to hike very far so we headed back to the campsite.

Organic Pantry Staples

On the way back, we found a cool turtle trying to cross the road so we picked him up and moved him to the other side. He was just so cute and hung out there and let us take some pics of him! I really wanted to take him home with me but the last time we did that, we ended up having to donate the poor guy to a school. We’ll always miss you Sunshine!

We made our way back to camp to relax. Elisa went to her bunk to play on her phone, Zeek went to the couch to play on his and I went and took a little nap. Later, I began prepping food for some foil packs while AC got a fire going. Foil camps is one of those easy meals that I love for camping, or even a lazy summer night at home. I discovered these amazing little things during a Girl Scout trip. I prepped brats and Italian sausage, corn, green beans, potatoes, peppers and onions. Then, each person fills their packet with exactly what they want, and top it with butter and seasonings before sealing it up. It would then get cooked in the oven or on the grill at home. Since we were camping, we threw them on the little grill. I also made some Mac and cheese to go with it.

While the food cooked, we played with Loki, playing tugging of war and throwing toys for him. He’s such a big baby and loves lots of attention. He also has big dog syndrome, where they don’t seem to realize just how big they are and think they make perfect lap dogs. Because he’s so big and messy, I usually don’t like him in the camper too much, so when we would go in, he would stare at us through the screen…creeper lol.

After we were done eating, we sat by the fire for a bit. We had a bunch of fire wood and planned on having a fire going all night. However, the campground host made her way over and was telling us about a large storm that was headed our direction. She told us we needed to put the awning back in and put away anything we didn’t want to blow away. The sky didn’t look too bad, but we took her word for it. Good thing we did! That storm came in fast and hard!! While it poured outside, the 4 of us, plus Loki of course, hung out inside, watching movies for the rest of the night, with the volume all the way up to hear over the storm.

SUNDAY

Sunday morning we woke up to everything being drenched. But even after that crazy storm the night before, we woke up to a beautiful morning. We packed up some water and snacks and took another drive. This time, we left the campground and explored the area. We stopped a few times to try to get some good pics of the views and water, but there were generally too many trees in the way to see much if anything.

As we continued driving, we eventually saw a small road on our left. We turned around and made our way back to it. Because it was such a tiny road, I couldn’t tell if it was someone’s driveway, or maybe just a maintenance road. I stopped at the entrance, while AC and Zeek followed the road up. They called me within a few minutes and said that we HAD to come up the road; they had found a great trail for us!

Find Airline Award & Upgrade availability

The boys found Tater Knob Fire Tower trail, which had been on my to-do list, but didn’t have enough signal out there to pull up the map! This trail is super short, only 0.6 miles but definitely got a workout. There are so many steps and climbing up rocks that my legs were killing me by the time we made it the tower. Elisa and Zeek enjoyed finding the little spaces to climb in and out of and there were lots of beautiful flowers.

Once we finally made it to the top, we learned that the ladder for the tower had been removed. That didn’t stop these boys though as they climbed up the bars to the top! As beautiful as I thought the views were from where I was, they didn’t even compare to the complete panoramic views that they got from up there!

We made our way back down the trail and back to the car, still exhilarated by our little adventure. We drove around a little more, but didn’t see any other cool trails so we went back to the campground We drove up and down the the campground roads, seeing how others set up their camps, seeing the damage done by the storm and any wildlife that decided to hang out on the side of the road watching us. The rest of the day was pretty laid back and we didn’t do much.

MONDAY

The next morning, we got everything all packed up and made the drive back home. It was a great weekend, full of just enough adventures for our group. I think we all had a great time but we were more than happy to make our way back to civilization.

I love long holiday weekends and can’t wait to get away for the next one! What’s your favorite holiday getaway?

The Virgin River carves its way through The Narrows at Zion National Park, Utah Credit: MichaelJust

As many of you know, I took a hiatus from writing, however, I found this article still in my drafts. It was originally written in April of 2022, so you’ll notice that there are still references to the pandemic. Since I’ve not been back since that time, I’m leaving the information as is, because there is still great information in here.

If you have never experienced the Narrows, you should definitely add it to your bucket list. It is an experience unlike any other that I’ve had and definitely one that I plan to do again. Please keep in mind that this excursion can be dangerous, so please use caution! Be sure to plan ahead and know what you’re getting into before you arrive.

What are the Narrows?

The Narrows is a section of slot canyons that go through the Virgin River, within Zion National Park.

Zion Adventures

Be sure to visit Zion Adventures if you plan on hiking the Narrows. They have a variety of gear that you can use on your adventure, from boots, neoprene socks, Gortex pants and body suit!

We arrived just as the store opened at 8am. They allow you to pick up your items the night before, so long as they have them available, but I suggest going in the morning of. They helped us get on our gear and even gotten me a bigger size in pants when my big ole booty wouldn’t fit in.

Organic Pantry Staples

They were super helpful and got us on our way as quickly and efficiently as possible. I only wish that they had a better idea of what the water is like in the Narrows. Had I known then, I would’ve opted for the full body suit.

If you plan on visiting Zion and would like to do some adventures, whether it’s hiking the Narrows, canyoneering, biking or camping, they’ve got gear for you to rent.

How to get there

At the Visitor Center, you’ll take a shuttle through the park. During peak times, driving on the scenic road is only allowed by shuttles, so this is the only way you’ll be able to get to experience most of the hikes.

As of March 2022, masks are still required to be worn on the shuttles. I didn’t see anyone disobeying the rules either.

You’ll take the shuttle all the way to the last stop, Temple of Sinawava. It’s maybe a 10-15 minute ride from the Visitor Center to the last stop.

Be sure to check with the driver to find out when the last shuttle leaves. You don’t want to get left behind!

The Hike

After getting off the shuttle bus, we stopped to use the restroom. Once you go past this point, there are no more restrooms, so use them while you can!

We then walked the one mile down the boardwalk along the river to the entrance of the Narrows. We had started first thing in the morning and yet there were already quite a few people there.

As we came down to the river, we realized that most people were just taking pictures, maybe dipping their toes in the water.

Kayleigh and I made our way into the river. The water was so cold, even through the pants we could tell.

We started up river, trudging through the water. It was a bit higher than I had expected it be, right around my knees. Between that and the current, it was really slow moving getting anywhere, especially for me who’s a very slow mover anyway lol.

As we were moving, more people starting making their way into the river, so we were no longer alone.

Parts of the river got really deep, at one point coming up to my chest! When we noticed the higher sections, we tried to go around them as best as possible.

At one point, maybe a mile up the river, I slipped on some rocks. I tried to catch myself but ended up falling into the water. The current was so strong that it ended up pulling me back down river. I kept trying to stop myself but couldn’t get my feet down and the water was just so fast! I ended up coming to a halt when the water was a little lower.

I was completely soaked and my back was sore. Kayleigh was worried about hypothermia, since the water was so cold, so we decided it would be smart to turn back around and head back towards the boardwalk.

As we were going, Kayleigh ended up in one of those really deep sections and ended up going almost all the way under! Between the two of us being soaked and cold, we just kept trying to get out the water as quickly as possible.

10 Days Later

After the hike, I was extremely sore! My back and butt hurt so bad, I assumed I must’ve hit them on some rocks. I just kept trying to ignore it, just used to be sore after hikes. It’s part of the adventure!

When the pain wasn’t going away, and in fact, getting worse, I thought I should probably go to the doctor. They did an x-ray and discovered that I had broken my tailbone! No wonder I was in so much pain! I’m guessing that I must’ve hit when I initially fell.

Now I have to wait 8-12 weeks for my tailbone to heal. All that because I just had to hike the river.

Although I was injured during this excursion, it was still incredible and I would still, absolutely, do it again! Zion National Park is incredibly beautiful and I have yet to see anything else like it. I will definitely be back and hope to see you there!!

Blog

Hey all! It’s been awhile and a lot has changed in my life, but I’m back!!

First off, I want to thank everyone who has continued following along while I’ve been on my hiatus. I greatly appreciate the support that I’ve been given during this time of my life and I sincerely appreciate every one of you!

As of February 2024, I’m now a divorcee. My children are growing up quickly. Kayleigh is all grown up and working time in the food service industry. Anthony is turning 18 shortly and graduating high school. He’s planning on college but doesn’t seem to have chosen one just yet. My youngest, Elisa, is a freshman in high school and seems to be loving it. She’s following in her brother’s footsteps, being a member of the marching band and has also chosen to join the school’s track team.

I myself am still working full-time as bookkeeper and office manager for a local home maintenance company. I’m going to attempt to do one trip a month to be able to continue my writing, however, things have been a bit more difficult with all of the children’s activities. Right now, I’m planning Anthony’s graduation party this coming June. I had forgotten just how much planning goes into it, but this time, at least I have a bit more experience. I knew to reach out to the venue much earlier this time, although, we still were limited on available dates.

I have lots of plans of things I’d like to do and places I want to go. I still want to travel the country and visit as much as I can. I want to visit every single National Park and every single National Forest. I want to camp and hike and explore as much as I can. The United States is so large and there are so many amazing things to see. The history of this country may be dark and dirty, but the nature of it is absolutely incredible! The mountains and hills, the valleys and the rock formations. The beautiful creatures that survive in unbelievable surroundings.

I bought a cheap camper last spring. It’s super cute and I’ve put a lot of time and money into renovating it, making it more mine. The nasty, ugly curtains, have been removed. The plumbing, all redone! Cabinets, painted a gorgeous blue! I pulled down the old border from around the camper as well. Haven’t done anything different with the walls yet, but still deciding what I should do. All of the lights have been updated to LED and brand new tires. I’m very proud of the work that’s been put into it!!

Isn’t that just the cutest camper ever?! It’s the perfect size to take the kids with me on trips. There’s one room, plus bunk beds and a pull out couch. The table also turns into a bed, though I haven’t had the chance to try that out yet! Can’t wait to take this thing out for some regular trips and enjoy the hell out of it!!

So, for now, this is where I’m at. I’m still working, and loving spending time with my kids, but also trying to get out there and explore! You’ll be seeing more of me, it’ll just take some time to get moving. I hope you’ll hang in with me while I get back into the groove. So, goodbye for now, and I’ll be seeing you soon!!

It’s Spring Break and Kayleigh and I have decided to take a road trip to Utah to visit the 5 National Parks there!

We left on Friday afternoon. I got off work early so we left not long after the kids got home from school. I hadn’t planned on us leaving so early, so I didn’t expect for us to make it very far that first night. I was happy to just make it to Indianapolis which was about a 3 hour drive. Since we left earlier in the day, we drove a little farther, almost to the Illinois state line. We stopped for the night in a town called Terre Haute. Read about our experience in the hotel here.

The next morning, we left bright and early. When I say we almost made it to the state line, I mean it. Apparently we had 7 miles left!! Saturday, we drove through Illinois, Missouri, Kansas and part of Colorado. We stayed the night at another hotel in Limon, Colorado. This is what we thought of our stay.

Wind farms along I-70 in Kansas

Sunday morning we left early again. We drove through the Colorado Rockies, which absolutely terrified me, although it wasn’t nearly as bad as driving through them in the winter. By early afternoon, we had made it to our next hotel. Since it was still early, we hung by the pool and hot tub for a little while, then went to the grocery store to grab a few things.

Arches National Park

Monday morning, we left early to head to Arches National Park, our first stop. We got up early so that we could try to catch the sunrise. This is the best we could get.

Sunrise at Arches National Park

Delicate Arch

After getting our sunrise pics, we headed straight to the parking lot for Delicate Arch. I just couldn’t wait to get some pictures of it! It was a tough hike with a lot of uphill and climbing up rocks. Kayleigh couldn’t handle anymore about halfway up. She says she ate too much and felt like she was going to throw up so she turned around and went back to the car.

I kept going; I’d made it this far and I wasn’t turning around! I made it up there, slowly, and it was totally worth it!!

My view of Delicate Arch at Arches National Park

After Delicate Arch, we decided to go check out some of the overlooks and get some pics; Kayleigh wasn’t up for anymore hiking for the day.

A panoramic from the Fiery Furnace overlook

Canyonlands

Monday evening, after setting up our campsite, we decided to head over to Canyonlands to take a look at some of the overlooks and we were not disappointed!

The view from Orange Cliffs Overlook, my favorite view so far
Grand View Point overlooking White Rim

Shafer Trail

That night we took some pictures of the overlook. The next morning, I tried to drive down the trail but it was absolutely terrifying. It was a small road, meant for 4x4s (which I didn’t realize when we started it) that wound it’s way 4 miles down to the bottom of the canyon. We started it but because of the tight curves, I freaked out and started having a panic attack. I managed to turn around and get out of there!

View of the Shafer Trail from the overlook across from the Visitor Center

Aztec Butte

Next, we went to the Aztec Butte. The trail split in 2, with one route heading to the Puebloan granaries and the other continuing up to the Aztec Butte. We did both sections and they were amazing! Climbing up the slick rock was a cool experience!!

View from the top of Aztec Butte

Capitol Reef

Next up was Capitol Reef National Park. We arrived and set up our campsite before going on to the explore the park. We went to Panorama Point and Goosenecks Overlook. Neither was all that impressive to us.

View from Gooseneck Overlook at Capitol Reef National Park

We ended up packing up our campsite and heading towards Bryce Canyon. The campsite was fine, however, we really were disappointed in the park. I think the only cool thing there were the pectroglyphs.

Bryce Canyon

We stayed at a small cottage the night before going to Bryce Canyon.

By now, we’ve decided on looking at the overlooks before starting any trails. I took several pictures along the drive up the scenic road, however, the majority didn’t save for some reason. I’m not sure if it was the lack of signal or what, but about half my pictures from that day area gone!

Natural Bridge at Bryce Canyon National Park
Another overlook at Bryce Canyon National Park

Sunrise Point

After we looked at the all the overlooks, we found some parking and started at Sunrise Point.

View from Sunset Point at Bryce Canyon National Park

We went down to do the Navajo Loop. The switchbacks were intense! I truly can’t imagine going back up them!! I didn’t get any pictures of the switchbacks. Kayleigh decided after the switchbacks that she was done, so she went back to the car to wait while I continued on.

When I got to the split, I followed the path to the left, taking me to the Queen’s Garden. I’m not sure if it was the elevation or what, but this hike was killing me! I had to stop to take my inhaler several times because I just couldn’t catch my breath!

Zion

After leaving Bryce Canyon, we headed to Zion National Park. We stayed at another hotel along the way.

On Thursday morning, we arrived at Zion Adventures right at 8am to pick up our water gear and got dressed there. We then made our way to the shuttles to catch a ride up to the Narrows.

Narrows

The Narrows is a slot canyon with Virgin River going through it. We planned to hike the 5 miles up the river to the split and then back down.

Unfortunately, the water was much higher than we had anticipated. Some parts of the river were right along my knees while other sections came almost up to my shoulders. At one point, I slipped on some rocks in a high spot and went rolling through the river until I managed to stop in a low section.

Because of the threat of hypothermia, since the water temperature was so cold, we decided to turn around and head back. On the way back to the beginning, Kayleigh stepped into a deep spot and ended up underwater. As much as we wanted to enjoy this adventure, we just weren’t prepared for it!

When leaving Zion, we saw some big horn sheep crossing and Kayleigh managed to snap a pic!

Big Horn Sheep crossing the street

The Drive Home

The drive back home was pretty uneventful and we got there pretty quickly. I think Bryce Canyon was my favorite. The views were incredible and it was all just so beautiful!

On Sunday afternoon, we arrived at our hotel in Moab, UT. The last time we tried to see Arches National Park, we stayed at Aarchway Inn and Kayleigh really liked it and wanted to stay again.

We found our booking on Booking.com. Again, the important things to us are 2 beds, non-smoking and preferably a breakfast.

Walking into this place is just so great. The theme is Western and I just love the decor. The woman who checked us in was very nice and even suggested some great places to get some dinner. Across from the desk, there’s a little general store with different snack options.

The Room

Our room was very nice and very clean. The only complaint in the room was that there wasn’t anywhere in the bathroom to set things since the sink was outside the bathroom.

Once we got settled in the room, we changed into swim suites and headed to the heated pool and hot tub! The hot tub jets were fantastic!! Unfortunately, as nice as the pool looked, it was dirty and neither of us got in. After the hot tub, we just sat around the pool and enjoyed some sun!

The heated pool at Aarchway Inn in Moab, UT

We went back to our room to change, then ran to the grocery store to grab a few things. We then went back to our room to relax for the evening.

Breakfast

The next morning, we headed to breakfast as soon as it opened. They had a large selection to choose from, including scrambled eggs, sausage, hash browns, sausage gravy, biscuits, fresh fruit salad, yogurts, pancakes with different toppings, juices and coffee. Kayleigh was in heaven!! She ate so much, I still can’t figure out where she puts it.

Ratings

On a cleanliness scale, I rate this location as a 9/10. Everything was really clean except for the pool. I know it’s normal for things to get in the water, that’s why I didn’t knock too much off for it.

On a friendliness scale, I rate this as a 10/10. Every time we saw an employee, they were extremely and genuinely friendly!

On the breakfast scale, I give this location a 10/10. The breakfast was delicious and we loved the variety. I’m also impressed when a place makes their own gravy!

Overall, I would rate this place as a 9.5/10 and would absolutely be back! This place was a bit on the pricier side, $251.00 for the night. It’s more than I usually spend on a hotel, but prices in this location are higher and we really wanted this place again.

We’ve now made our way through 5 states and have stopped for the night in Limon, Colorado at a La Quinta.

Once again, I booked our room through Booking.com. I wanted a non-smoking room with 2 beds and preferably a breakfast.

Just walking into this hotel was a hell of a lot better than the other one. We were checked in quickly and made our way to our room on the second floor. The halls and elevator were nice and clean.

The Room

The room was excellent! It just smelled clean when we walked in. It’s a nice large room with 2 beds, a closet and a nice large bathroom.

The only thing that seemed to be missing in the room was more light. It seemed really dark in the room no matter which lights we had on.

The first thing I decided to do was to take a shower and wash the road off me. After 15 hours in the car, you need a nice hot shower!

The shower pressure was a little lacking. It took forever just to get the shampoo and conditioner out of my hair. The temperature was nice though, which is always a good thing.

After my shower, I just got cozy in the bed. And it was cozy! I think pillows are the worst part of any hotel room experience. They’re always small and too soft, in my opinion. But the bed, it was JUST RIGHT! I did some work on my laptop and Kayleigh and I watched some TV.

The Breakfast

As you know, the breakfast is incredibly important to us. It helps determine how long we can go on our drive before stopping again.

This breakfast was pretty good. They had scrambled eggs, sausage, yogurts, muffins, cinnamon rolls, stuff for oatmeal, a pancake maker and a waffle maker!

We definitely filled up and I even enjoyed a couple cups of coffee!

After breakfast, we went back to our room to pack up and check out.

The Ratings

On the cleanliness scale, this place gets a 10/10. I can’t complain about the cleanliness in any way here!

On a friendliness scale, I’d give it an 9/10 just because they were so fast and efficient with check-in and check-out.

Breakfast was an 8/10. There was a variety but Kayleigh says that the hot water for her hot chocolate was lukewarm. Also, we both agreed that the sausage tasted a little weird.

Overall, I would give this place a 9/10. Everything was pretty good about it. There’s just a couple of complaints that I have, one of them being the water pressure and the lack of bright lighting for the room.

This is definitely a place that I’d come back to again, especially for the price! This room cost us $96 for the night. So far, one of the best places I’ve stayed at.

We made our way past Indianapolis and decided it was time to stop for the night. It was still early but Kayleigh was already done with being in the car. We tried stopping a half hour earlier but were told that everything was booked up because of a llama show. That’s right, I said LLAMA! Not sure what that is but it sure sounds like something I’d love to go to!!

Since they were booked, we made a quick reservation on Booking.com for an affordable nearby hotel. We ended up at a Days Inn in the town of Terra Haute. My priority is simply 2 beds, non smoking and breakfast.

We checked in around 7:30pm. The lady at the desk was nice but not very conversational. I like talking with the people while they’re checking me in. Just something I do.

I drove over to the side of the building where our room was. There was a man standing at his door just smoking, staring at us while we pulled in and started taking out our bags. He made us a little uncomfortable but we just kept getting our stuff.

The Room

The room reeked of cigarette smoke, even though it’s a non-smoking room. My guess is a lot of people just stand at the door and smoke. The smell was just so gross.

The room looked ok. Nothing fancy, which was just fine. We just needed a room for the night, we weren’t planning on staying long.

The bathroom was small and snug. There was hair in the shower, which was really nasty to me. We didn’t end up showering just because we were so grossed out by it.

The beds were comfortable. Kayleigh just wanted to get out of the place and said that she felt like she was being bitten but I never saw anything in the beds and she didn’t have any bite marks on her.

Breakfast

We checked out early so we could hit the road early but wanted some breakfast before heading out. We stopped in the lobby and I got some coffee while Kayleigh checked out the breakfast food.

I never even made it far enough to look at the food because she was already back complaining about it. She says that there was food out but there were no plates or bowls to eat anything. I believe it since there were no lids for the coffee and no cups for the juice, which didn’t even work anyway.

We just ate some muffins in the car that I had brought with us.

Rating

On a cleanliness scale, I would give this place a 6/10. It smelled so bad and the bathroom was pretty gross.

On a friendliness scale, I would say a 7/10. The front desk woman was ok; not terrible. She didn’t talk much but I guess I didn’t really try to talk to her either and ended up on my phone.

The breakfast scale is an important one for us. We enjoy eating our breakfast before heading out for the morning and it can make a big difference about how far we can make it before having to stop again. We give this one a 2/10. They had breakfast but there was nothing to eat it with so it was kind of pointless to even waste the food that way.

Overall, I would give this place a 5/10 and I think that’s being generous. This is definitely not a place that I would come back to. This room cost us $73.00 for the night.

As Kayleigh and I are planning our spring break, we’re also planning what road trip snacks to bring along. We’ll be driving from Ohio to Utah, 5 days at Utah’s National Parks, and then back to Ohio. That’s 9 days in the car! We’re really having to think about what some of the best road trip snacks are. Here are some of our favorites that we’ll be bringing along.

Need some road trip ideas? Check out my list of 6 Epic Road Trips!

Breakfast

Muffins

Whether these are homemade or store bought, muffins make a great breakfast. They’re easy to eat and no warming up is needed. We generally eat these within the first couple of days though so that they don’t get stale. Not sure how long they’d last, we never let them get that far lol.

Cereal

Boxes of cereal are nice if you don’t mind no milk. I personally like my cereal dry anyway since I don’t really like milk. We’ve done large boxes of cereal and then scoop some into a plastic cup to eat or buy the small, individual boxes so that we can have variety.

Booking.com

Energy Bars/ Energy Balls

I’m not a big energy bar fan but I know a lot of people are. I think they taste weird. It’s probably just my imagination, because I know they’re supposed to be healthy, so that means there must be weird stuff in them that doesn’t taste good. I don’t know what it is about them but I just don’t like them. And I’ve tried different brands thinking that it’s just that kind I don’t like.

Either way, energy bars can be a great breakfast. Since I don’t like them, I do energy balls that I make myself. I call them energy balls simply because I don’t know what else to call them. Look up some recipes on Pinterest, there’s some yummy ones out there!

Peanut Butter or Nutella and Banana

I love chocolate and bananas as well as peanut butter and bananas. I’ll wrap it in a tortilla and it makes a great filling breakfast. This is one of my go to breakfasts!

Lunch & Dinner

Jerky

You can never go wrong with jerky of any sort. We usually have at least one pack each. This time we’ve got one small pack each and one large bag each as well. Since we’ll be camping or sleeping in hotels, we’re trying to figure out meals without having to stop for fast food. We prefer the teriyaki. What’s your favorite?

Peanut Butter & Jelly

This girl can eat a lot of peanut butter and jelly! Not me, Kayleigh!! When we went to Florida she ate 2-3 sandwiches every single day! We make it easy by grabbing the squeeze containers of jelly and peanut butter that way there’s no need for spreading. You can bring a loaf of bread but I also plan on bringing tortillas on our trip. They’re much more stable and I don’t have to worry about them getting squished!

Wraps

Another thing Kayleigh loves are wraps. I have to agree, they’re pretty damn good! We usually bring some sort of lunchmeat, or a variety, like turkey and ham, and some sliced cheese. She doesn’t like condiments but I like a little mustard on mine. Then add some lettuce and wrap it up! Nice and filling meal! I think another one we should try is chicken tender wraps. I’m sure she’d eat those like crazy too!

Sliders

Before we leave on a road trip, I usually back a tray of sliders. They’re usually ham and turkey with sliced cheese and garlic butter. My kids have always loved these and they’ve become a road trip staple for us. This is always our first lunch of the trip and they’re usually gone pretty quickly. I’ve tried mixing up the flavors and toppings but they seem to prefer ham and turkey with garlic butter on Hawaiian rolls.

Snacks

Chips

You’ve got to have a variety of chips in the car. They’re just so easy to snack on! I like to bring a variety pack so that we don’t get bored too quickly. They have to last for several meals.

Fresh Fruit

I love fresh fruit and nothing can compare but sometimes taking fruit on a road trip can be a bit tricky. I absolutely love berries and melon. Unfortunately, neither of those do well in the car unless you eat them right away. I prefer to bring apples, oranges and bananas in the car. Bananas can be a pain also, since they bruise so easily, but I just have to have a banana with peanut butter!

Applesauce

We love some applesauce. Unfortunately, it’s not very easy to eat in the car with a spoon so I prefer to get the squeeze pouches. It’s much easier when you’re driving to squeeze you’re applesauce. And it’s a nice refreshing treat when all you’ve been eating is junk food.

Pretzels

These should go along with the chips but to me, it’s something different. This is just another delicious salty and crunchy treat that we enjoy. I would also include crackers in this category as a lot of people enjoy some Goldfish or Cheez-Its. Again, large packages and scooping some into a cup for a serving is nice but I prefer individual packs so that we can get a variety.

Candy

Who doesn’t love candy??!! We always have a variety in the car but we also like to stop at gas stations and buy more. We’ll usually get kinds that we wouldn’t normally eat so that it’s more exciting. We all have our regular candies that we choose but we try to choose others that we may not see very often or another one that we like but it’s always second or third choice.

So there you have it! That’s what we take on our road trips! It’s pretty basic but for us it’s nice and easy. What are some of your favorite road trip snack/meals?

Camping vs Backpacking: Which do you prefer?

Are you a camper? Wondering what’s the difference between camping and backpacking? Well, they’re very similar in most ways. Here’s how they break down.

Camping is a great experience and if you haven’t tried it yet, you should, whether you go primitive style or in an RV, it’s up to you!

When going camping, you may bring a tent and sleeping bags or you might sleep in a vehicle. For the purpose of this comparison, I’m going to compare backpacking to tent camping.

Camping

Here are some items that you may bring along when camping:

  • Tent, sleeping bags, blow-up mattresses, pillows
  • Camp kitchen, including your Dutch oven and cast iron pan
  • Camp games like horseshoes, corn-hole
  • Firewood for a campfire
  • Lots of food and snacks
  • A variety of clothing for different needs like swimming
  • Camp seating
  • Tarp to cover a sitting area
  • Variety of lights to keep your area lit in the evening

Something that you may enjoy when camping in the summer is one of these. There’s nothing worse than camping in the summer and being so hot and sweaty that you can’t enjoy the fun or even sleep at night! Stay cool and savor the moments!

Backpacking

Backpacking is much more primitive than camping. Also, you’re campsite will involve only what you bring in on your back in your pack. Here are some things you’ll have in your backpack:

  • Tent, sleeping bag, sleeping pad and inflatable pillow
  • Small camp stove and small pot for cooking
  • Enough food and snacks to get you through your trip
  • Essential clothing
  • Possibly a book or playing cards

Check out my post here to see what I take when I go backpacking.

The Difference

As you can see, the difference is that camping is more about enjoying the campsite and relaxing. A backpacking campsite is different in that you will not be able to bring as many items with you. Chances are, you also won’t be staying at your campsite long when backpacking. You’re usually just making camp for the evening and then getting started again in the morning. It’s much more transient.

Which would you prefer, camping or backpacking?

1. Grand Canyon Rim to Rim

23.9 miles hiking North to South

Plan 3-4 days for a backpacking trip. This is a little difficult to get simply because you need a backcountry permit for camping and that’s only done by lottery.

Spring Escape Bundles starting at $64!

2. Appalachian Trail

2,190 miles

This estimated 2,190 mile trail starts goes from Mt. Springer in Georgia to Mt. Katahdin in Maine. Because of the distance, expect to spend 6 months on this trail.

I’ve already attempted this one, but plan to go back and complete it!!

3. Pacific Crest Trail

2,650 miles

This 2,650 mile trail starts at the Mexican border in California, goes up the west coast and ends just over the Canadian border. Expect 5-6 months to complete this one.

4. Arctic Circle Trail

160 km

Explore this trail through Greenland “from ice sheet to sea.”

5. Camino de Santiago

Camino de Santiago is more known as a pilgrimage. There are multiple places where it begins but the ending in Santiago de Compostela in Galicia, Spain. The French route is the most popular and that’s probably the one that I would take, however, the North route seems like more of a challenge, but is less traveled.

6. Jordan Trail

This trail through Jordan is 675 km and travels through 75 villages and towns. On this trail, you’ll see incredible landscapes and wildlife, but also tons of historical relics! This hike should take about 40 days.

7. Hadrian’s Wall Path

This 84 mile trail should take about 8 days to complete. This is a mostly grassy trail which follows the wall built in the second century as part of Roman defenses. You will be starting at Bowness-on-Solway, England and ending at South Shields.

8. Inca Trail to Machu Pichu

This 26 mile trail makes way through the Andes Mountains, exploring developments over 2,000 years old, ending at iconic Machu Pichu. Because of the effect of so many travelers, the Peruvian government has placed a limit on how many people can hike during a season. Hiking with a guide is required and they sell out quickly so advanced booking is necessary.

9. La Ciudad Perdida

This 70 km hike takes you through the Colombian rainforest and ends with 1,200 steps to enter “The Lost City.” This hike is considered extremely difficult considering the heat, humidity, mosquitos and terrain. This trail requires a guide and prices are regulated, so you will pay a little over $300 US.

10. Laugavegur-Skogar Trail

This 34 mile trail starts in Landmannalaugar , Iceland and ends in Thorsmork. Hike over Icelandic mountains, with views of glaciers! This hike can be done in 3-4 days.

11. Mt. Kilimanjaro

Located in Tanzania and Kenya, Mt. Kilimanjaro has rainforest, bushland, alpine and artic zones. This is probably one of the most difficult because of the variety of terrains. It would definitely be a challenge!

12. Pacaya Volcano

Hike up this Guatemalan active volcano and roast marshmallows at the top!

Eruption in volcano Pacaya in Guatemala, Central America. 2552 meters.

13. Villarrica Volcano

This is another active volcano, located in Chile, that you can hike up! This hike is 5.6 miles. The best time to do this hike is in the summer when there is less snow coverage.

14. Monserrate

This mountain is located in Colombia. Similar to Camino de Santiago, this hike is considered a pilgrimage to the church at the top. If you don’t want to hike it, there are other ways to get there, including an aerial tram. This hike is 1.5 miles.

15. Painters’ Way

What if we Walked? did such a perfect job of describing this place and has made me want to go so bad! This German hike is a 110 km loop.

16. Great Ocean Walk

This amazing one way hike starts at Apollo Bay in Melbourne, Australia and ends at Twelve Apostles National Park. It’s a 110 km hike that takes you through forests and rocky shores with several water crossings.

17. Quilotoa Lagoon

This 6.4 mile hike, located in Ecuador, takes approximately 3-5 days to complete. Keep in mind that this is a hike through the Andes Mountains and will be a challenge. Don’t expect to do this in 1 day.

18. Pedra de Telegrafo

You’ve probably seen pictures all over Instagram of this location. People love taking pictures here! This 2.2 mile hike in Rio de Janeiro yields extraordinary views.

Where to go first?

As you can see, there are some seriously phenomenal bucket list locations on this list! Now to choose, where do I go first?

Where would you go first? Have you done any of these already? What did you think?
